Brown Butter Blondies with Chocolate Chips

These are the only blondies I’ve ever liked. Most blondies lack flavor, and I missed the fudginess of brownies. These blondies have that butterscotch fudginess I was looking for, and the brown butter makes all the difference in the world. It adds this toasty nutty element that will have people trying to guess the secret ingredient. These blondies have extra everything: extra butter, extra brown sugar, extra salt, extra vanilla. These are the boldest of blondies, and I love them so much.

Make sure to use dark brown sugar in this recipe. It makes a huge difference. Light brown sugar is okay, but you won't get the same cookie dough-like quality that you'd get otherwise.

Brown Butter Blondies with Chocolate Chips:


  • 1 cup (2 sticks; 226.8 grams) unsalted butter

  • 1 ¾ cups (332 grams) dark brown sugar (it has to be dark brown sugar)

  • 2 eggs 

  • 4 teaspoons (20 ml) vanilla extract 

  • 1 ½ cups (180 grams) all-purpose flour

  • 1 teaspoon (5 ml) salt

  • ½ cup (87 grams) chocolate chips (optional)

Directions:

  1. Preheat the oven to 350 degrees F. Spray a square 8x8 baking pan with baking spray. 

  2. Ready a large mixing bowl. Melt the butter in a medium-sized stainless-steel saucepan over medium heat. Stirring it occasionally, let it bubble for about 3-5 minutes. It will sputter and be a little scary-looking at first, but eventually the foam on the top will subside substantially. It will start to smell nutty, and as soon as it goes from yellow to a golden brown, pour into the mixing bowl to stop the cooking. Use a spatula to scrape out as much of the toasted milk solids on the bottom of the pan as you can, that’s flavor gold! Then I like to let the butter cool to the touch so that it doesn’t scramble the eggs and melt the chocolate.

  3. In the mixing bowl with the cooled butter, add the brown sugar. Use an electric hand mixer to combine. Then add the eggs and vanilla, and mix. Add the flour and salt, and mix until just combined. Add the chocolate chips and mix. Pour into the prepared pan and smooth the top with a spatula. 

  4. Bake for 30-35 minutes. Allow to cool completely at room temperature before cutting into squares.
